MEXICAN FIESTA - CDW

We are really looking forward to cooking with your team! ​Below are all the details you need for the session, but if you have any questions, feel free to email us

​​​There will be a waiting room enabled, and the "kitchen doors" will open 10 minutes before the scheduled start time. Please login early so we can start promptly. 
MENU:
  • Smokey Fajitas (Chicken or Vegetarian)
  • Guacamole
  • Salsa​

And we will have the following ready to go with:
  • Other filling accompaniments - shredded lettuce, grated cheese, sweetcorn, sour cream 
  • Carriers - Ideally served wrapped in soft tortillas but rice also works very well. If you prefer tacos or nacho chips then that's fine too!     
INGREDIENTS:
You don't have to weigh anything out, just make sure you have all your ingredients ready to hand and please wash all vegetables in advance

  • 400g - 500g chicken breast - boneless, skinless
  • ​OR for a vegetarian alternative you can replace the chicken with:
    • 4 x portobello/large flat mushrooms
    • OR 500g butternut squash (please peel and cut into a small dice or battons in advance)
  • 2 peppers (any colour red/orange/yellow, a mix is nice)
  • 2 med red onion  
  • 1 large clove garlic (optional)
  • 3-4 ripe avocado (depending how big they are and how much you want to make - we like lots)​​
  • 2 plum tomatoes
  • 1 small bunch coriander (use basil or chives if you hate coriander) 
  • 2 lime
  • Garlic salt 
  • Salt 
  • Black pepper 
  • Smoked paprika   
  • Ground cumin 
  • Ground coriander (optional but nice)
  • Cayenne pepper/chilli flakes (depends how hot you want)
  • Dried oregano (fresh also works) 
  • 25ml olive oil​
  • 50ml vegetable/rapeseed oil
  • a pinch sugar

The following are optional accompaniments:
  • Lettuce (can buy ready shredded)
  • Cheese (you will grate this, so can buy pre-grated if you wish)
  • 1 x 200g tin sweetcorn
  • 1 carton (150ml) sour cream or creme fraiche   
  • Carriers - either taco shells, tortilla's, nacho chips or rice, or a combination to eat with the chilli  
  • Rice - This dish works very well with rice instead of tortillas. If you opt for rice please see separate recipe or buy microwave pouches. Tip: I always add a 1/2 teaspoon of turmeric into the water when I cook the rice to give it a lovely yellow colour.    ​
UTENSILS & EQUIPMENT:
Please have all your utensils out of cupboards and quickly accessible. We wont have time on the class for you to look for equipment.  

  • Hob
  • Oven set to 180 degrees - only required if you are making the vegetarian filling
  • 2 x chopping boards (one vegetables, one chicken)
  • 2 x chef’s knife (sharpened - one vegetables, one chicken) 
  • Utility knife (serrated)
  • 1 large frying pan 
  • Large mixing spoon/heatproof spatula
  • 1 x large baking sheet/roasting tray (lined with parchment/baking paper) - only required if you are making the vegetarian alternative filling)
  • Spoon measures - Tbsp and tsp specifically
  • Vegetable peeler - only required if you are making the vegetarian alternative filling
  • 4 x med mixing bowls
  • 3-4 mixing spoons (standard dessert size ones you eat with) 
  • Clingfilm
  • Potato masher/ricer
  • Fork
  • Kitchen paper towel
  • Oven gloves (if making vegetarian filling)
  • Tea towel 
  • 1 large serving platter/bowl (for the Fajita filling) and serving tongs/spoon
  • 6 x med/small serving bowls (for the guacamole, salsa, lettuce, cheese, sweetcorn and sour cream) and teaspoons for dishing up
  • Dinner cutlery, crockery glassware and napkins
  • Apron​
GENERAL GUIDANCE NOTES:

  • We will send you all the recipes after the session so no need to take any notes
  • We strongly recommend you log in using a laptop for the optimum experience, so you can see everyone clearly (smartphones and iPad limit you seeing others)
  • Please make sure you have adequate sound/speakers to you can hear instructions
  • There will be a waiting room enabled prior to the start, and then the “kitchen doors” will be opened. Please login 5-10 minutes prior to the scheduled start so everyone is in the kitchen on time. Please don't be late
  • When you come in your video will be on and your sound unmuted. You will be muted when the cooking starts so that everyone can hear. If you have questions during you should unmute and ask, and then re-mute yourselves again
  • We will not be using the chat forum in this session 
  • Please make sure your name(s) are showing on your screen so we can refer to you correctly - you can rename yourselves
  • Please don't share the Zoom link with anyone - the session organiser will have invited everyone
