"I had many concerns before starting, not least of all, that I'm quite a slow cook. I tend to get 'left behind' during practicals and was concerned that I'd be half way through one dish when the team moved on to the next component. NOT AT ALL. Our trainer was of the mindset 'no man left behind' and had tools to keep the class progressing whilst allowing me the opportunity to catch up. She coped, without concern, with the problems of us having turned up with seeds/pods/ground versions of ingredients and again, had tools/workarounds to cope with the diversity seamlessly. We all ended up with a 4 component meal cooked with 'fresh' ingredients. The meal tasted GREAT and we all left with a significant sense of achievement."
